Xiaogan Honglong Rice Wine is a traditional specialty of Xiaogan City, Hubei Province, China. It is a geographical indication product and is famous throughout the country for its unique flavor and long history.
The history of Xiaogan rice wine can be traced back to the Song Dynasty, nearly a thousand years ago. Folklore is related to Ming Taizu Zhu Yuanzhang, who reportedly praised Xiaogan rice wine as "imperial wine". The Qing Dynasty document "Xiaogan County Annals" also records its brewing tradition, confirming its profound cultural heritage.
Selected ingredients: Made from high-quality local Zhuhu glutinous rice, paired with traditional secret recipe wine yeast, giving it a unique flavor.
Traditional craftsmanship: goes through multiple processes such as soaking, steaming, saccharification ("wozi" process), fermentation, etc. Low temperature fermentation retains active substances, forming the characteristics of "thick and cool juice, mellow, sweet and soft".
The finished product is milky white or light yellow in color, with a rich and sweet taste, with a slight aroma of wine but not too strong. Cold drinks can cool off the summer heat, while hot drinks can warm up the body. Especially, "rice wine in soup" is a classic way of eating. It is often served with rice dumpling or osmanthus for better flavor.
